It is a restaurant just below the Arctic Circle in Sweden run by a talented chef, Magnus Nilsson, who is also a local boy from the region of Jamtland. The location of Faviken is a quiet and extremely winter wonderland about 800 kilometers north of Stockholm and a half hour drive from the famous Swedish ski resort Åre. Faviken is not only a restaurant but also a private domain of no less than 8000 hectares established in 1885. Not owned by Nilsson but by a rich hedge fund milionair from Everything on the 12-course tasting menu at Faviken is made with just-foraged ingredients: local garden produce, locally raised meat, wild game, herbs, and mushrooms from the estate, cheese and other dairy from the surrounding region of Jämtland, and seafood from the neighboring region of Trí¸ndelag, Norway.
